Veggie Crusted Salmon
This Baked Salmon dish is easy to prepare and very satisfying…
  • 4 Salmon Fillets
  • 1 Tbsp. Sesame Oil (can use olive oil)(I use grapeseed oil)
  • Salt & Fresh Black Pepper, to taste
  • 1 Carrot, grated
  • 1 Jalapeno, grated
  • 1 half Onion, grated
  • 1 half Bell Pepper, grated
  • 1 tsp garlic, minced
  • 1 half lime, zested
  • 1 half lemon, zested
  1. Preheat oven to 400 degrees / try on the grill too!
  2. Mix ingredients #4-10 in a mixing bowl
  3. Rub Fish with Oil and season with Salt & Pepper
  4. Coat Fish with mixture and place each in parchment paper, making a pouch by folding seams to close and place the (4) pouches on baking sheet
  5. Bake fish for 10 – 15 minutes, or until desired doneness is achieved
  6. Use the half lemon or lime to squeeze on top
