Garlic Dill Pickles

Garlic Dill Pickles
 
Ingredients
  • 8 lbs small pickling cucumbers
  • 4 Cups water
  • 4 Cups white vinegar
  • ¾ Cup white sugar
  • ½ Cup pickling salt
  • 3 Tbs pickling spice
  • 7 heads of fresh dill
  • 7 cloves garlic (smashed)
Instructions
  1. Place cucumbers in a large pot or bowl and cover with ice and water. Allow to soak for about 2 hours but no more than 8 hours. .
  2. Drain and allow to dry.
  3. Combine water, vinegar, sugar, pickling salt and pickling spice in pot and bring to a boil. Simmer for 15 minutes.
  4. Sterilize jars and lids in boiling water. Place 1 dill head and 1 garlic clove in bottom of jar. Pack cucumbers into hot sterilized jars leaving about ½ inch at top. Pour hot pickling liquid into jars filling them to ¼ inch of the rim.
  5. Top with lids and screw on rings.
  6. Place a rack in the bottom of a large stockpot and fill with hot water, bring to a boil. Carefully lower the jars into the pot leaving a 2-inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring water to full boil, cover and process for approximately 5 minutes.
  7. Remove jars from stockpot and place onto a wooden or cloth covered surface.
  8. Be sure to leave jars several inches apart until they are cool. Once they have cooled, check the top of each lid by pressing on it with your finger. If the lid does not move up or down at all they have successfully sealed. (If you have any that did not seal, you can refrigerate and eat within 2 – 3 weeks.

Ingredients
  • 2 packets Dry Italian Dressing Mix
  • ½ Cup Brown Sugar
  • 6-8 Chicken thighs (You can use any chicken pieces)
Instructions
  1. Preheat oven to 350 deg.
  2. Line a metal rimmed baking sheet or pan with foil.
  3. Place brown sugar and seasoning packets in a large Ziploc freezer bag and shake to mix.
  4. Add chicken pieces to bag and coat.
  5. Place chicken pieces on pan skin side up.
  6. Bake for 35 minutes for thighs, longer for thicker breast pieces or until juices run clear.

  • ½ cup melted butter (1 stick)

  • 1 loaf Texas toast
  • 4 eggs
  • 1½ cup milk
  • 1 teaspoon vanilla
  • Powdered sugar for sprinkling
Instructions
  1. Melt butter in microwave & add brown sugar....stir till mixed.
  2. Pour butter/sugar mix into bottom of 9 x 13 pan....spread around
  3. Beat eggs, milk, & vanilla
  4. Lay single layer of Texas Toast in pan
  5. Spoon ½ of egg mixture on bread layer
  6. Add 2nd layer of Texas Toast
  7. Spoon on remaining egg mixture
  8. Cover & chill in fridge overnight
  9. Bake at 350 for 45 minutes (covered for the first 30 minutes)
  10. Sprinkle with powdered sugar
  11. Serve with warm maple syrup

  • 4 heaping tablespoons baking cocoa
  • 1 cup Boiling Water
  • ½ cup Buttermilk
  • 2 large Eggs, lightly beaten
  • 1 teaspoon cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla extract
  • _____
  • FOR FROSTING:
  • ½ cup Finely Chopped Pecans or Walnuts (optional)
  • plus pecans or walnut halves for top
  • 1-3/4 stick Butter (real butter NOT margarine)
  • 4 heaping tablespoons baking cocoa
  • 6 Tablespoons Milk
  • 1 teaspoon Vanilla
  • 3 cups powdered sugar
Instructions
  1. In a mixing bowl, combine flour, sugar, and salt.
  2. In a saucepan, melt butter. Add cocoa. Stir together.
  3. Add boiling water, allow mixture to boil for 30 seconds, then turn off heat. Pour over flour mixture, and stir lightly to cool.
  4. In a measuring cup, pour the buttermilk and add beaten eggs, baking soda, cinnamon, and vanilla. Stir buttermilk mixture into butter/chocolate mixture. Pour into sheet cake pan and bake at 350-degrees for 20 minutes.
  5. While cake is baking, make the icing. Chop pecans finely. Melt butter in a saucepan. Add cocoa, stir to combine, then turn off heat. Add the milk, vanilla, and powdered sugar. Stir together. Add the pecans, stir together, and pour over warm cake.
  6. Cut into squares.

Note: I use an 18x13 sheet cake pan.

Ingredients
  • 1½ cups apple butter
  • ½ cup packed dark brown sugar
  • ¼ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 3 large eggs, slightly beaten
  • 1 cup evaporated milk
  • Whipped cream
  • 9-inch unbaked pie crust
Instructions
  1. In a large bowl, stir together apple butter, brown sugar, salt, cinnamon and nutmeg. Stir in eggs. Gradually add evaporated milk, mixing well.
  2. Pour mixture into prepared pie crust. Bake in a 350 degrees oven 1 hour to 1 hour 15 minutes, or until a knife inserted near the center comes out clean.
  3. Let cool completely on a wire rack.
  4. If you like, serve with whipped cream.

I just love watermelon. It is so refreshing. This is one of my favorite products from Wildtree- WATERMELON LIME FROZEN DRINK MIX.
Ingredients
  • 2 ½ cups watermelon
  • ¼ cup tequila
  • 1 bag Wildtree Watermelon Lime Frozen Drink Mix
  • 9 slices lime
Instructions
  1. Blend all ingredients together until smooth.
  2. Dived among 9, 3 ounce cups and freeze for two hours.
  3. Insert short popsicle sticks into limes and then place on top of popsicle mixture in mold.
  4. Return to freezer until completely soild.
  5. Sprinkle with coarse salt before serving.

6 Questions To Ask Yourself Before You Skip A Workout

Creating an exercise routine and staying committed to it is easier said than done. We all want to skip a day every now and then, but should we?

When we skip a day we set ourselves up to want to skip more days. We can also lose momentum, this is especially true for those prone to losing touch with good exercise habits.

As a coach, the best advice I can give is to never skip a day if you can help it.
If you are thinking about skipping a day, here are some questions you should ask yourself before you make your final decision.

Ask Yourself:

1. Do I have a good reason to skip this workout?

Examine why you want to skip your workout. There are good reasons to miss your workout, but not every reason is a good one. If you’re really tired, injured or sick you might need to take a break and rest. Keep in mind that being tired is usually a poor excuse because exercise provides energy.

If you are lacking motivation, you should think back and remember why you made your fitness goals in the first place. Reaffirm your goals and then decide if you really want to skip your workout. Every missed workout puts you further away from your fitness goals.
2. What will I do to make up for my missed workout day?

Having a back-up plan for missed workout days is a good thing. Eventually we all have to miss a workout, but we don’t have to work out any less. We can do an extra workout during the week or we can work out longer during the next workout. Missing a day doesn’t have to be the end of the world.

3. How is missing this workout going to affect my fitness goals?

Each workout is important to our overall fitness goal. Missing a workout can affect the momentum that you are building. Remember that exercise has the best benefits when it is done on a regular basis. If you miss too many workouts it could impact your goals and prevent you from reaching them. You should consider this before you decide to miss even one day.

4. What can I do to convince myself to not miss this workout today?

If you are lacking the motivation to do your workout for the day you can always resort to bribery. Offer yourself a reward for pushing through and doing the workout. You will be amazed at what you can accomplish when you receive the proper motivation. After you do your workout you will feel great and wonder why you even wanted to miss it in the first place. You should know what motivates you best, use that to help you make your decision.

5. What is really stopping me from working out?

Be honest with yourself and understand why you’re not wanting to workout. If you are tired, get some sleep then workout. If you’re hungry, grab a snack then start your exercises.

If you’re bored with your workout, change it up and try something new. Call up a friend and workout with them. Remember that working out should be fun and with all the choices we have in fitness there should be no reason to ever get bored.

6. How Will I Feel If Skip The Workout?

Will I feel guilty, or bad about myself? Will I feel like I did not accomplish what I should have? What feelings will I miss out on that I typically languish in after exercise? Maybe I won’t feel healthy, or accomplished, or strong?

To Skip Or Not To Skip A Workout, That Is The Question

It takes motivation to keeping your commitment to your fitness goals. The key to keeping that motivation is to remember why you made those goals in the first place.

Stay focused on what you want from your workout and reward yourself for all your hard work.
Have fun and change up your workout. Take a class, workout with a friend and let others help you to stay motivated.

Once you have all the facts and make careful considerations you will be able to make the correct decision whenever doubts creep in.

Put the chocolate chip cookie dough on the outside of a cupcake pan lined with a cupcake liner and make cookie bowls. Make sure you don’t put too much cookie dough on, or it will spread out. Just enough to cover the cupcake liner.
Bake at 350 F till golden, about 12 minutes. Let cool before removing from pan. Once they are baked… you can put Ice Cream inside of them and top off with your favorite toppings!!!

How To Pack School Lunches That Your Kids Will Actually Eat

Summer is coming to an end and school is about to start. That of course means it’s time to get back into a school year routine. Part of that routine in many households is packing school lunches. Packed lunches are a great option when your child isn’t too fond of what the school has to offer or you want a little more control over what your child is eating.

Of course if your child has dietary restrictions or food allergies, packing lunches is a must. Frankly, packing a lunch allows you to include healthy foods your child will actually eat and it doesn’t have to cost any more than what you would be paying for lunch at school.

Of course packing a lunch every day doesn’t do any good if your child doesn’t eat it or ends up trading most of it away for junk food. The key then is to find things that your child loves and enjoys eating.

The best place to start is to get your child involved. Depending on the age of your kids, you could even put them in charge of making their own lunches. Not only do you know that they’ll pack something they will eat, being in charge of packing lunch will teach them responsibility.

Start by talking to your kids about what they want in their lunch box. Make a list of options and then head to the store so you have everything you need for the first week of school. Getting the kids as involved as possible will make sure that they end up with lunches they will eat. For older kids that may mean making their own lunches (under your supervision of course).

Younger children can help. Even your kindergartener can wash grapes and put them into a container, or pick a snack for his lunch box. Get in the habit of making lunches together the night before. Over time you can give the kids more and more responsibility for their lunches. This alone will help make sure they eat what they’ve packed. After all, it’s the lunch they made. Along the way you’re teaching them independence and important life skills.

Of course you want to encourage your kids to pack and eat healthy foods. Insisting on all healthy, organic food options all the time may not be your best strategy though. Strike a balance and make compromises. If your kids pack and eat a healthy wrap or salad for example, let them have some cookies for dessert. Teach them to make good choices, but don’t freak out if they decide to pack some Cheetos or a pack of Oreo cookies. Your goal is to get them to eat fairly healthy and make smart food choices, not restrict all access to junk food, causing them to trade with friends for forbidden Twinkies.

Well here ya go!!

SMALL BATCH CUPCAKES

How to make only Six Cupcakes :
3/4 cup ANY Cake Mix
2 tablespoons butter, melted
1/4 cup milk
1 egg
HEAT oven to 350°F. Line 6 muffin cups with paper baking cups.

Blend 3/4 cup of the cake mix and 2 T. melted butter in small mixing bowl on medium speed until well blended. Add 1/4 cup milk and 1 egg. Beat on medium speed 2 minutes. Divide evenly into prepared muffin cups.

BAKE 19 to 23 minutes or until toothpick inserted into center comes out clean. Cool 5 minutes. Remove from pan; cool completely.
Frost cupcakes with your favorite frosting.
Note: Reserve rest of the cake mix in a jar or air tight bag for future when you want to make more cupcakes!

Throw this in the crockpot and head out to have fun...it will be ready when you get back. Easy...Healthy....Tasty!
Ingredients
  • 1 pound boneless skinless chicken..
  • 1 yellow pepper cut into chunks
  • 1 red pepper cut into chunks
  • 1 onion chopped
  • 3 garlic cloves minced
  • 2 tsp dried basil
  • 1 tsp oregano
  • ½ tsp thyme
  • 1 tsp sea salt (optional)
  • 1 14.5 oz can stewed tomatoes
Instructions
  1. Place chicken in bottom of crockpot
  2. Place peppers and onions and garlic on top
  3. Sprinkle the basil, oregano, thyme and sea salt
  4. Pour stewed tomatoes with juice over all
  5. Cook on low for 6 hours
Notes
Serve over pasta or eat just the way it is !! Save the leftovers to use in wraps, YUM!

Sometimes the smallest details make the biggest difference. Raw Romaine lettuce is a delicious, nutritious and crispy addition to any salad. However, when you cut a head of fresh Romaine in half and cook it on a grill for a few minutes… magic happens. The flavors intensify and lend an interesting dimension to an otherwise basic salad. If you don’t have access to a grill – no problem. The directions below explain how to get similar results in your oven.
Ingredients
  • Salad Ingredients:
  • 2 heads Romaine lettuce, washed, patted dry and cut in half length-wise
  • 8 oz. rotisserie chicken breast meat
  • 4 oz. goat cheese
  • 1 cup red cabbage, thinly sliced
  • ½ cup pecans, chopped
  • Balsamic Vinaigrette Ingredients:
  • ½ cup extra virgin olive oil
  • ¼ cup balsamic vinegar
  • 2 T. fresh lime juice
  • 1 t. Dijon mustard
  • 1 clove garlic, finely minced
  • 2 t. honey
  • salt and pepper, to taste
Instructions
  1. Set your oven to broil.
  2. Cut the Romaine heads in half and place on a baking sheet lined with parchment paper. Brush with olive oil and sprinkle with salt and pepper. Place under the pre-heated broiler for a couple minutes (keeping a close eye on it because lettuce will burn quickly). Remove once the lettuce is a nice, golden brown.
  3. Add all the ingredients for the balsamic vinaigrette together in a glass bowl. Whisk thoroughly to combine. Allow vinaigrette to sit for at least half an hour to give the flavors a chance to meld.
  4. Place ½ browned Romaine head on each plate and top with 2 oz. of chicken and 1 oz. of goat cheese. Divide sliced red cabbage and chopped pecans among the four plates. Drizzle each salad with a little of the vinaigrette and serve immediately.

Ingredients
  • For the Roll:
  • 1 cup almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon sea salt
  • 2 eggs
  • ¾ cup granulated Swerve, Truvia or Stevia, divided
  • 2 mashed bananas
  • 1 teaspoon vanilla extract
  • 2 Tablespoons lemon juice concentrate
  • 3 egg whites
  • Confectioner's sugar (approximately 2 Tablespoons)
  • For the Filling:
  • 4 ounces light cream cheese
  • ½ cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup Cool Whip topping
  • 1 Tablespoon Confectioner's sugar
Instructions
  1. Using coconut oil, grease a 15" x 10" x 1"-inch jelly roll pan (or large cookie sheet), line with parchment paper that is cut about 2 inches larger than the pan itself. Make sure to push out all air bubbles from under the paper and then use more coconut oil to grease the parchment paper, making certain to get the corners and sides as well. Set aside.
  2. Combine the flour, baking soda, baking powder, and salt in a small bowl.
  3. In a large bowl, using an electric mixer, beat the eggs for 5 minutes. Add ½ cup of the sweetener, banana, vanilla and lemon concentrate. Mix well. Wash off beater bars & dry them. Heat oven to 375 degrees F.
  4. In another small bowl, beat egg whites on medium speed until soft peaks form. Gradually beat in remaining sweetener until stiff peaks form.
  5. Gently fold the flour mixture into the banana mixture, just until combined. Fold in egg whites.
  6. Spread evenly into the prepared pan. Bake for 10 to 12 minutes until cake is golden brown and springs back when lightly touched.
  7. Cool in pan for 5 minutes. Lay out a clean dish towel on a flat surface and dust it with Confectioner's sugar. Invert cake (including the parchment paper) onto the towel. Gently peel off the parchment paper. Starting at the short side, roll up the cake with the towel (jelly roll style). Place seam side down on a wire rack to completely cool.
  8. Filling:
  9. In a small mixing bowl, beat cream cheese and brown sugar until smooth. Beat in vanilla and fold in Cool Whip.
  10. Unroll the cake and spread filling evenly over the cake to within a quarter inch of the edges. Re-roll, place seam-side down on a serving platter. If serving immediately, dust with Confectioner's sugar, cut and enjoy!
Notes
Store leftovers (if any), in the refrigerator. Can also drizzle with caramel or chocolate sauce, fresh berries and ice cream. Very rich!!!

COCONUT PISTACHIO PIE
Serves: 8
 
Ingredients
  • 2-1/2 cups flaked coconut, lightly toasted
  • ⅓ cup butter, melted
  • 2 cups cold 2% milk
  • 2 packages (3.4 ounces each) instant pistachio pudding mix
  • 1 cup whipped topping
  • 2 tablespoons chopped pistachios, optional
Instructions
  1. In a small bowl, combine coconut and butter. Press onto the bottom and up the sides of a greased 9-in. pie plate. Refrigerate for at least 30 minutes or until firm.
  2. In a small bowl, whisk milk and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. Spread 1-1/2 cups over crust.
  3. Fold whipped topping into remaining pudding; spread over pie. Sprinkle with pistachios if desired. Cover and refrigerate for at least 2 hours.

BUFFALO CHICKEN CASSEROLE
Serves: 6
 
This kickin’ casserole has all the classic buffalo chicken flavor you'll love. Definitely not your normal casserole. It delivers big, bold taste and is on the table in less than an hour!
Ingredients
  • 3 cups shredded cooked chicken breast
  • ⅓ cup Franks Original Red Hot Sauce
  • ⅓ cup Ranch Salad Dressing(I use Wildtree)
  • 6 ounces egg noodles (or pasta of your choice), cooked and drained
  • 1¾ cup Alfredo Sauce (make your own or use 14 oz jar of pre made)
  • ¼ cup shredded Parmesan cheese
  • ¼ cup crumbled blue cheese
  • 6 slices of ultra thin provolone cheese (for top)
  • ¼ cup shredded cheddar cheese (for top)
Instructions
  1. Heat the oven to 350°F.
  2. Lightly grease an 11x8x2-inch baking dish.
  3. Stir the chicken and Franks hot sauce in a large bowl. Stir in the noodles, Alfredo Sauce, Ranch dressing and ¼ cup parmesan cheese and ¼ cup blue cheese.
  4. Spoon the chicken mixture into glass baking dish.
  5. Cover the top with the 6 slices of provolone cheese and sprinkle with the cheddar cheese.
  6. Bake for 25 minutes or until the chicken mixture is hot and bubbling and the cheese is melted
Notes
Serve with more Franks Hot Sauce if you like it real spicy!

1. Moisturizer – simply scoop some out of the jar and apply all over your body, including neck and face.
2. Eye cream – apply under the eyes to reduce puffiness, bags, and wrinkles. Use on the lids in the evening.

Most often it is Ziplock containers that get passed back and forth, and that’s OK too!

I see this all over Pinterest but do not know the original source.  If anyone knows, please let me know-Thank you!

Supplies needed:
Sharpie markers  (bold or metallic colors work best so I am told)
Round or Square white ceramic plate (You can get these cheap at the Dollar store)
Acetone nail polish remover
Paper towels

 

Write/Doodle whatever you choose on the plate.

Then bake the plate in the oven at 350 degrees for 30 minutes.
