Healthy Spinach Dip
  • ½ cup low fat cottage cheese
  • ½ cup fat free plain greek yogurt
  • 1 package vegetable soup mix (I used Knorr)
  • 1 can of water chestnuts chopped very fine
  • 1 package of frozen spinach, thawed and drained
  1. In a blender or food processor, blend the cottage cheese and yogurt until smooth.
  2. Transfer to a bowl and add remaining ingredients.
  3. Refrigerate for at least one hour prior to serving to allow the flavors to blend.
  4. I served mine with sourdough and multigrain breads, veggies, and yam chips.
  5. Very yummy and you can't tell it's low fat!
