Ingredients
  • 1 (20 ounce) can pineapple rings, drained
  • 2 cups diced strawberries
  • ¼ cup chopped cilantro
  • 1 yellow onion, finely diced
  • 1 lime, juiced
  • ¼ cup Wildtree Fiesta Salsa Mix
Instructions
  1. Preheat grill to high heat.
  2. Clean and grease the grill grates. Grill pineapple slices for 5 minutes, flipping halfway through cooking time.
  3. Chop grilled pineapple and toss with the remaining ingredients.

  • ½ bananas, cut into 1-inch slices
  • ½ cup frozen strawberries, sliced

Instructions
  1. Place banana slices on a plate, separating each slice. Place slices in freezer for 2 hours (overnight is best!).
  2. Remove strawberries and bananas from freezer and place in food processor, blend until they are the consistency of soft serve ice cream.
  3. Add cream, sweetener and vanilla and blend until smooth and well-mixed.
  4. Transfer ice cream to a freezer container and freeze until solid.
  5. Scoop with ice cream scoop and serve.

Grilled Watermelon Salad
 
Ingredients
  • 1 tbsp + 4 tsps EVOO
  • ½ tsp sea salt, divided
  • ½ tsp black pepper, divided
  • 4 seedless watermelon wedges, (about 2lbs)
  • Spring Mix salad blend or spinach leaves
  • 2 oz goat cheese, crumbled
  • 8 tsp honey
Instructions
  1. Preheat grill to medium high. Combine 1 tbsp oil and ¼ tsp of salt and pepper in a bowl.
  2. Brush over watermelon wedges evenly.
  3. Place watermelon on grill for roughly 2-3 on each side.
  4. Remove from heat and set aside.
  5. Divide salad mix on 4 plates.
  6. Top with watermelon, then goat cheese.
  7. Whisk together remaining oil, honey, salt and pepper. Drizzle over salads.

This was thrown together with what I had on hand one evening and turned out to be a real gem. The dressing is my own sweet & sour poppy seed vinaigrette but you can use any other dressing like it.

Serves 4

Ingredients
Sweet Poppy seed Vinaigrette (recipe follows)
1/2 large head iceberg lettuce, torn in bite size pieces
1 fuji Apple, cored and diced
1/4 cup shredded coconut
1/2 can rinsed garbanzo beans
1 Seedless cucumber peeled / chopped
6-8 crushed Triscuit Crackers (i used Brown Rice Roasted Red Pepper w/ Black Bean – adds a crisp and salty crunch).

Toss all ingredients with dressing (below) to taste and serve.

1 cup Veggie Oil
1/3 cup apple cider vinegar

1/2 cup sugar
1 Tb. Poppy Seeds
1 tsp. salt
1 tsp. gr mustard or Dijon Mustard.

Shake all ingredients in closed container till sugar dissolves.
