  • 1 16 0z container of fresh strawberries, halved
  • 1 cucumber, cut it in half and then in quarters...
  • 1 cup of cubed cantaloupe or honeydew melon
  • 3 Tbsp of honey
  • 2 tbsp of lime juice
  • 1tsp grated lime peel
Instructions
  1. In a large bowl mix your fruit and cucumbers
  2. Then in a small bowl whisk the honey, lime and peel
  3. Drizzle over fruit well and chill

Ingredients
  • 2 oranges
  • 1 tsp orange blossom water or vanilla extract
  • 1 tsp granulated sugar (or honey)
  • a pinch or 2 of ground cinnamon
  • Few mint leaves
Instructions
  1. Peel and slice the oranges. Arrange them on individual plates or serving bowls.

  3. You can also slice the oranges ahead of time put them in the fridge and wait until you are ready to serve to add the sugar and cinnamon.
  4. Decorate with mint leaves.

Ingredients
  • 1 container of fresh strawberries
  • 1 lg container creamy whipped cream
  • 1 package cream cheese (softened)
  • 1 ½ tsp vanilla extract
  • 1 box cheesecake flavored pudding
  • 1 freezer bag
Instructions
  1. Wash strawberries, cut an X in the top, allow to dry, chill in fridge for 2-3 mins
  2. Fold together whipped cream and pudding till blended. Slowly add cream cheese and vanilla extract. Place into freezer bag (zip locked) and chill for 30-35 mins in the refrigerator.
  3. Remove bag from fridge, snip a corner off and pipe into the strawberries.

Ingredients
  • ½ bananas, cut into 1-inch slices
  • ½ cup frozen strawberries, sliced
  • 2 Tbsp Almond Milk (Can also use lactose free milk)
  • ¼ tsp vanilla
Instructions
  1. Place banana slices on a plate, separating each slice. Place slices in freezer for 2 hours (overnight is best!).
  2. Remove strawberries and bananas from freezer and place in food processor, blend until they are the consistency of soft serve ice cream.
  3. Add cream, sweetener and vanilla and blend until smooth and well-mixed.
  4. Transfer ice cream to a freezer container and freeze until solid.
  5. Scoop with ice cream scoop and serve.

  • -Strawberries
  • -Whip Cream
Instructions
  1. - Cut the stem off the end of the strawberries to make a base.
  2. - Cut the strawberries off at the tip leaving a large enough size for Santa's hat
  3. - Place the strawberries in the whip cream lined pan (this will hold them in place)

  • 3 large fresh peaches cut in half
  • 3 tsp. butter
  • 6 tsp. brown sugar, divided
  • 1 tsp. almond slivers (optional)
  • Sprinkling of ground cinnamon, to taste

Instructions
  1. Cut peaches in half and remove pit. Put in baking dish, skin side down.
  2. Place ½ teaspoon butter in the center of each peach, top each peach half with 1 teaspoons brown sugar, and sprinkle with cinnamon and almonds.

Grilled Watermelon Salad
 
Ingredients
  • 1 tbsp + 4 tsps EVOO
  • ½ tsp sea salt, divided
  • ½ tsp black pepper, divided
  • 4 seedless watermelon wedges, (about 2lbs)
  • Spring Mix salad blend or spinach leaves
  • 2 oz goat cheese, crumbled
  • 8 tsp honey
Instructions
  1. Preheat grill to medium high. Combine 1 tbsp oil and ¼ tsp of salt and pepper in a bowl.
  2. Brush over watermelon wedges evenly.
  3. Place watermelon on grill for roughly 2-3 on each side.
  4. Remove from heat and set aside.
  5. Divide salad mix on 4 plates.
  6. Top with watermelon, then goat cheese.
  7. Whisk together remaining oil, honey, salt and pepper. Drizzle over salads.

This was thrown together with what I had on hand one evening and turned out to be a real gem. The dressing is my own sweet & sour poppy seed vinaigrette but you can use any other dressing like it.

Serves 4

Ingredients
Sweet Poppy seed Vinaigrette (recipe follows)
1/2 large head iceberg lettuce, torn in bite size pieces
1 fuji Apple, cored and diced
1/4 cup shredded coconut
1/2 can rinsed garbanzo beans
1 Seedless cucumber peeled / chopped
6-8 crushed Triscuit Crackers (i used Brown Rice Roasted Red Pepper w/ Black Bean – adds a crisp and salty crunch).

Toss all ingredients with dressing (below) to taste and serve.

1 cup Veggie Oil
1/3 cup apple cider vinegar

1/2 cup sugar
1 Tb. Poppy Seeds
1 tsp. salt
1 tsp. gr mustard or Dijon Mustard.

Shake all ingredients in closed container till sugar dissolves.

Most peaches sold in the United States are either from Georgia, South Carolina or California. While it is best to get them when they are in season and use them right away, there’s no reason you can’t get them while they’re in season and either can, dry or freeze them for use during other parts of the year. No matter how you enjoy them, peaches are a wonderful addition to any diet and do not have to be eaten only for dessert.

One way you can enjoy peaches is to peel them, cut them in half and then brush them with olive oil. Season them with a bit of salt and pepper. Then place them on a preheated grill. Be sure to grill the peach on both sides for about three minutes. Remove them from the grill and then place them on a serving dish. Grate some fresh parmesan cheese over them and enjoy. (YUMMY)
If that doesn’t sound appealing, you can also try some grilled peach salsa. Prepare the peaches as above but without the pepper. When they’ve been grilled for about two minutes on each side, remove them from the grill and allow them to cool. Next, slice the peaches and add finely chopped red onion.
