Mango Orange Smoothie

Who does not love how mangoes and oranges taste together? Both delicious on their own, they take fruity goodness to a whole new level when combined. Make this mango orange smoothie when you’re feeling fatigued or just need something to help brighten your day. The vitamin C and beta carotene will help boost up your energy levels as well as fortify your immune system.

What You’ll Need:

  • 1 cup fresh orange juice (or use the ones with no added sugar from the store)
  • Half a mango, sliced and frozen
  • 1 seedless orange, peeled, cleaned, and frozen (or use about a cup‚Äôs worth of clementines)
  • 1 scoop vanilla or plain protein powder

Let’s Blend Up a Glass of Sunshine!

  1. Get all your ingredients ready. This smoothie recipe is perfect for meal-prepping because you can prepare portions ahead of time and simply put together when ready to drink!

  1. Pour the orange juice into your blender and follow with the frozen mango and orange wedges plus the protein powder.

  1. Blend everything together. You may add some honey or agave syrup at this point if desired but there is really no need.
  1. Pour into a tall glass and enjoy!

  1. Makes 1 generous serving!

Notes:

  • You can also enjoy this as a fruit slushie if you omit the protein powder.
  • You may replace the orange juice with pineapple juice or even coconut water for an unexpected flavor twist!

CITRUS MINT SPA WATER

CITRUS MINT SPA WATER

Replace juice and soda with this refreshing water
Ingredients
  • 2 Oranges (add some lemon slices if you like)
  • 20 mint leaves (crushed)
  • 1 gallon of water and ice
Instructions
  1. Wash and slice oranges into thin rings.
  2. Break the mint leaves into small pieces.
  3. Place ingredients into a dispenser/pitcher.
  4. Fill with with ice and water, let the water soak up the flavor of citrus and mint for at least 10 minutes.
Notes
Drinking mint-flavored water is a great home remedy for digestive problems. It is rich in vitamins A, C, and B12 with traces of iron, potassium, selenium, and zinc.
Be sure to add fresh mint leaves and then crush them. This crushing spreads the mint oil from the leaves so you can drink the water right away, or you can let it set for a few hours for a stronger flavor. Enjoy!

Infused Water Tips

Infused water is the process of adding fruits, vegetables, and herbs to your water, then letting these ingredients flavor the water. In addition to providing a delicious flavor with a wide range of combination options, you also get some of the nutrients from the produce and herbs, which further improves how healthy your water is. Infused water is easy to do, but there are a few things you should know first. Here are some things to keep in mind when you are making your infused water.

Types of Water to Use

The first thing you should know about making infused water is that filtered water is always better. Filtered water is cleaner, so this is really going to improve the overall quality and flavor of your infused water. Since not everyone has access to enough filtered water to fill infused water pitchers every time, tap water is okay when necessary, but do try to get filtered water if at all possible.

When choosing your water, you should only use room temperature or cold water. Avoid warm or hot water, since it can cause the produce to fall apart at a rapid rate, which reduces how many nutrients are going to end up in your water.

Choose Organic When Possible

If at all possible, try to select organic fruits and vegetables. These can often be found in the produce of your supermarket, but a better option might be to get them from a weekly CSA, farmer’s market, or contacting local farmers directly. This allows you to get fresh fruits and veggies that you know were grown locally without added fertilizers and other chemicals. Organic produce does tend to provide a better flavor for infused water. However, the most important part is having healthy water with your favorite fruits and veggies, so if you can’t use organic, don’t worry too much about it!

How to Prep the Ingredients

After you select the ingredients you want to use for your infused water, you will then need to prep them before putting them into the pitcher. You should always rinse the fruits and vegetables to make sure no chemicals are left on them. Even if you bought them organic, it is still a good idea to rinse them and make sure they are clean. If you are using herbs, you want to crush them with a muddler since this will help to release the oils. The exception is when the herb is leafy, such as with mint or basil.

Most fruits and vegetables need to be cut at least in half before being put in the pitcher so that they can release their flavors. Hard fruits and vegetables like cucumber and apples need to be cut into thin slices since they can take longer to release flavor to the water. With berries and citrus fruit, they are softer, so just cutting them in half or quarters should be fine.

What to Make Your Infused Water In

By this point, you are ready to start putting your infused water together. Before you add in the water, make sure you have the right container. While you can technically use anything, a glass pitcher is usually recommended. However, regardless of which way you go, make sure it is BPA-free and food-safe. Many plastic pitchers are not ideal and won’t keep the water fresh, but in the end it is really up to you. There are also pitchers and cups used especially for infusing. They typically have a long and narrow section in the middle where you put your herbs and fruit, with holes or slots so the flavor can be released. You can use these, but they aren’t necessary.

How Long to Soak the Produce

When making infused water, you will add the produce and herbs first, then add your room temperature or cold water on top. You then want to let the water infuse so that you can get good flavors and nutrients from the fruits and vegetables being used. If you are leaving it out on the counter, this is usually done in about 2 hours. Otherwise, wait 4-6 hours if keeping it in the refrigerator for the infusing process. If you leave it overnight, it will be super flavorful.

When the Water Should Be Enjoyed

The ideal time to drink infused water is within 24-48 hours after the infusing process is complete. It is usually best to drink it the same day, but at least try to drink it within the first couple days. Waiting 3 days is okay, but don’t leave it for longer than that. Make sure you are not leaving the fruits and vegetables in the water for this long though. They should be removed and only the water should remain in the pitcher for this long. Citrus fruits will remain fresher for longer, while melons are going to get soft and mushy quickly.

Also keep in mind that if you drink the infused water the same day, you can usually refill it 2-3 times with the produce in the pitcher or cup and still get good flavor from it.

Homemade Non-Alcoholic Eggnog

eggnog

Homemade Non-Alcoholic Eggnog
Serves: 12

If you love the rich, creamy taste of classic eggnog, but don’t like the idea of using raw eggs, this recipe is for you. For an adults-only version, add some rum, bourbon, or cognac to taste.
Ingredients
  • 12 eggs
  • 1 ¬ľ c. sugar
  • 4 c. whole milk
  • 2 t. vanilla extract
  • 1 t. ground nutmeg
  • 2 c. evaporated milk
  • 2 c. half and half
Instructions
  1. Combine eggs and sugar in a medium glass bowl and whisk until thoroughly combined. Transfer to a saucepan and stir in whole milk, vanilla extract, and ground nutmeg.
  2. In a separate glass bowl, stir evaporated milk and half and half until combined.
  3. Heat egg mixture over medium-low heat while stirring constantly to prevent the milk from scorching. When mixture reaches 160 degrees on a candy thermometer, remove from heat and slowly whisk in evaporated milk mixture.
  4. Cool slightly before tasting. Add more sugar or nutmeg, if desired, before transferring to an airtight container. Refrigerate overnight or until thoroughly chilled. Serve in mugs and garnish with whipped cream, cinnamon sticks, or a dash of nutmeg.

Cappi’s Caramel Macchiato

Cappi’s Caramel Macchiato

Cappi’s Caramel Macchiato
Ingredients:
8 ounces of Espresso coffee (your choice coffee/flavor)
6 ounces of Steamed milk
¬Ĺ – 1 Teaspoon pure Vanilla
Whipped Cream
Caramel (see my recipe below)

Directions:
Make Espresso: 3 heaping Tbsp to 8 ounces of water
Add Vanilla while brewing
In a 8 ounce cup, add 4 ounces of coffee
Add 3 ounces of Steamed milk
*Add your choice of Sweetener
Top with Whipped Cream and Drizzle with Caramel

My Note:
This recipe was brewed using a French press (pictured), but can achieve the same results from auto drip makers.
Drizzle Caramel to the inside of the cup prior to adding hot liquids thus eliminating any additional sweeteners.

The Caramel:

Ingredients:
¬Ĺ stick of Butter (about 4 Tbsp)
1 cup Brown Sugar
¬Ĺ cup Cream (I like the richness that cream adds, but Milk or Half & Half can be substituted)
1 Tbsp Vanilla
¬Ĺ tsp Cayenne pepper
Pinch of Salt
Pinch of Cardamom (optional)

Directions:
Mix butter, brown sugar, half & half, and salt in a saucepan over medium low heat. Cook while whisking gently for 5 to 7 minutes, until thicker. Add vanilla and cook another minute to thicken further. Turn off heat and pour sauce into a jar. Store in Refrigerator.

Use what you need and store the rest in an airtight container for several weeks - if it lasts that long! If you can’t get enough of this classic flavor, this recipe combines it with hot coffee, Irish cream and delicious whipped cream for a cozy and satisfying adults-only treat. Enjoy!
Ingredients
  • Pumpkin Pie Spice:

  • 1 T. ground ginger
  • 1 T. ground nutmeg
  • 2 t. ground allspice
  • 2 t. ground cloves
  • Homemade Whipped Cream ingredients:*
  • 1 pint heavy whipping cream
  • 2 T. real maple syrup
  • 1 T. pumpkin pie spice
  • 16 oz. freshly brewed hot coffee
  • 8 oz. Irish Cr√®me
  • additional pumpkin pie spice, for garnish
  • * substitute pre-made whipped cream, if preferred.
Instructions
  1. In a large glass bowl, blend 1 pint of heavy whipping cream with a hand or immersion blender until it doubles in size and changes texture. Then, drizzle maple syrup into the bowl and continue blending until the mixture is light and fluffy. Set aside.
  2. Before brewing, sprinkle fresh coffee grounds with pumpkin pie spice and gently shake to evenly combine the mixture. Brew spiced coffee grounds as usual.
  3. Pour 2 oz. Irish Cream into each cup and top with 4 oz. of freshly brewed coffee. Top with whipped cream and sprinkle with additional pumpkin pie spice before serving.

Watermelon Mint Lemonade

WatermelonMintLemonade_2

Watermelon Mint Lemonade

This watermelon mint lemonade is super easy to make and is so refreshing on a hot summer day. This is one of those recipes you’ll want to tinker around with to find the right flavor combination for your tastes. For example, the amount of water you need to add will vary depending on how juicy the watermelon is and how strong you want the flavor to be. Directions for a mint-infused simple syrup are included. The watermelon adds a lot of sweetness, however, so you may not wish to sweeten it further. It really depends on how sweet or tart you want the final results to be. If you are serving this recipe outside on a warm day, make extra so you can freeze some into ice cubes or an ice ring (if serving in a punch bowl). Using ice cubes made of the beverage you are serving rather than plain water will prevent watered-down drinks as the day or evening progresses. For an adults-only variation, add some citrus-flavored vodka before serving.
Ingredients
  • Mint Simple Syrup (optional)
  • ¬Ĺ c. granulated sugar
  • ¬Ĺ c. water
  • ¬ľ c. tightly packed fresh mint leaves, stems removed and crushed
  • 6 c. fresh watermelon, rinds removed and cut into chunks
  • ¬ĺ c. fresh lemon juice (6-8 medium lemons)
  • ¬Ĺ c. cold water, (plus more, if needed)
  • ¬Ĺ c. fresh mint leaves, tightly packed with stems removed
  • fresh mint sprigs, for garnish
  • lemon slices, for garnish
Instructions
  1. To make the simple syrup, add the sugar, water and crushed mint leaves to a small saucepan and heat over medium-high heat. Stir until the sugar dissolves completely. Reduce heat to low and simmer for 10 minutes. Remove from heat and discard mint leaves. Cool completely before using.
  2. Add watermelon chunks, lemon juice and ¬Ĺ cup cold water to a blender and blend until liquefied. Pour through a fine mesh strainer to remove any larger particles. Taste and add more water, if needed. Sweeten with mint-infused simple syrup, if desired.
  3. Bruise ¬Ĺ c. fresh mint leaves with fingers to release oils and add to the bottom of a large glass pitcher or jar. If serving immediately, add ice cubes to the container and pour the watermelon mixture over top. Add fresh lemon slices to the container for garnish.
  4. To serve, pour over ice and add a sprig of fresh mint and a lemon slice for garnish
