Here’s the recipe for my breakfast granola!! It’s really good! No grains at all… good for you… and it keeps me from getting hungry for a long time! I’ve been missing having a bowl of cereal for breakfast and I can have this with almond milk and it’s delicious! (I don’t add the sweetener)
Apricot Ginger Granola
5 dried apricots
1/4 cup coconut oil, melted
2 tsp vanilla extract
1/2 tsp almond extract
2 cups raw sunflower seeds
2 cups raw pumpkin seeds
1 cup raw chopped pecans
1 cup raw sliced almonds
3 cups unsweetened shredded coconut or coconut flakes
1 tsp ground ginger
1 tsp allspice
Sweetener equivalent to 1/4 cup sugar (optional)
Preheat the oven to 275F
In a food processor of food chopper, pulse the apricots until they are reduced to very small fragments. Transfer to a small bowl, ad the oil, and mix thoroughly, Mix in the vanilla and almond extracts. Set aside.
In a large bowl, place the sunflower sees, pumpkin sees, pecans, almonds, coconut, ginger, allspice, and sweetener (if using) and mix. Stir in the apricot mixture until well mixed.
Spread the mixture in a large baking pan and bake for 7-8 minutes. Stir, then bake an additional 7-8 minutes, or until lightly browned, Remove and cool. Store in an airtight container for a week on the counter or longer in the fridge.
